Angelo Pappas stands in front of the first of three Olympia’s originally opened by the late Spiro Aliagas in the late 1980s. It became a model for several similar restaurants operated by Greek entrepreneurs. Pappas worked previously at the former Mirabeau in Seattle's Columbia Tower and has been here since 1991. It continues at its landmark location oat the top of Queen Anne Avenue in Seattle.
